The Holiday Drink – A Recipe

We present a simplified version of a cocktail found on our latest cocktail list. This is a batch premix that's loaded with essence of a holiday season, which makes it excellent for a holiday party. Save the extra citrus syrup to use in breakfast cocktails, puddings, or to mix more rounds of bikinis.

The Bikini Cocktail

Yields 10 guests

To make the Citrus Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Drink (produces 850ml, serving 10)

400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

For the Cordial: Place every ingredients in a saucepan, heat until it reaches a gentle boil, agitating until the sugar dissolves. Next, remove from the burner and leave to cool down fully. Decant into a sealable bottle, seal and store in the refrigerator, it can be stored for about a month.

For the Premix: Combine all the spirits and syrup into one sizeable container, let it rest for one hour, then pass it through preferably using cheesecloth, making it fully clarified.

To serve: Measure 85ml of your premix into your mixing glass filled with ice, and stir carefully for about 60 seconds until cold. Pour to a frosted cocktail glass or similar, decorate with the cranberries and finish using a brief mist with the mandarin essence over the top.
